When it comes to coffee, we’ve all heard the phrase: “freshly roasted is best.” But is it true? Recent research says not always.

Freshly Roasted Coffee

  • Brewed within 1–2 days after roasting.

  • Higher CO₂ levels create bright, punchy, sometimes sour flavours.

  • Great for people who love lively, acidic cups.

Matured Coffee

  • Rested for weeks or even months after roasting.

  • Lower CO₂, smoother, more balanced flavour.

  • Perfect for drinkers who prefer rounder, softer profiles.

What the Study Showed

  • 70% of tasters could tell the difference between fresh and matured beans.

  • No clear winner in preference: about half liked fresh, half liked mature.

  • Conclusion: fresh doesn’t mean better — it just means different.
